Using these recipes, follow the methods outlined under brewing.
Otter Dark Stout 4.2% makes 12 litres
This stout recipe is courtesty of pdtnc, a member of Jim's Beer kit (an excellent site and forum for home brewers.) Named "Otter Dark Stout" after its main fermentable and its dark hue.
Malt and Grains

1.5kg Maris Otter Malt Extract

185g Crushed Crystal Malt

185g Roasted Barley

185g Pale Chocolate Malt

100g Crystal Wheat Malt

Hops

10g Goldings (60 minutes)

17g Fuggles (60 minutes)

10g Goldings (15 minutes)

10g Fuggles (15 minutes)

Warm the can of malt extract before pouring into your boiler / pan of hot (about 40 deg C) water. Use hot water to get all the extract out of the can. Add the grains and first work hops and boil for 60 minutes.

60 minutes indicates hops added at the start of a 60 minute boil. 15 minutes indicates hops added 15 minutesfrom the end of the boil, along with finings such as Protafloc or Irish Moss. Pour the liquid, through a seive or hop filter, into a brew bin and make up to 12 litres with cold water. When cool enough, add the ale yeast as per pack instructions.
