Using these recipes, follow the methods outlined under brewing.

Bitter-Sweet Stout 5% (makes 23 litres)

This (All Grain) stout is rather rich owing to the use of mild ale malt. Carafa special 3 provides the rich dark hue without the harshness of black malt.

Grain

4kg Mild AleMalt

500g Flaked Barley

1.1kg Crystal Malt

300g Carafa Special 3

Hops

25g Cascade (90 minutes)

25g Northern Brewer(90 minutes)

25g Goldings (15 minutes)

 

90 minutes indicates hops added at the start of a 90 minute boil. 15 minutes indicates hops added 15 minutes from the end of the boil. The alpha acid content of batches of hops can vary so the amounts of hops may need to be altered to get identical results each time. Having said that, variety is the spice of life.

Final Gravity 1.016
